Fried Avocado Egg Rolls

I did not know that Avocado could be used in the form of a spring roll/egg roll and I an SO grateful that I saw this on one of my friend’s Insta Stories and I created my own version of it. I don’t deep fry things often, but this recipe is really worth it!

Avocado Rolls

  • 8 egg roll wrappers
  • 3 avocados (peeled,seeded, and diced)
  • 1/4 cup onion (diced)
  • 4-5 sun-dried tomatoes (chopped)
  • 2 tbsp chopped fresh cilantro leaves
  • 1 Lime (juiced)
  • Kosher salt and freshly ground black pepper (to taste)
  • 2 cups vegetable or canola oil (for frying)


  • 3/4 cup fresh cilantro leaves
  • 1 jalapeno (seeded)
  • 3 tbsp olive oil
  • 1 clove garlic
  • 1 Lime (juiced)
  • Salt and freshly ground black pepper (to taste)

For the Rolls

  1. Mix together the avocado, onion & sundried tomatoes, cilantro, and lime. Season with salt and pepper to taste.

  2. Spoon about 1 tbsp or so of mixture onto each egg roll and roll up, seal the edges of the rolls using some lukewarm water.

  3. Warm up some vegetable oil to medium high before adding in the rolls, Turn them once or twice and cook until golden.

For the Dipping Sauce

  1. Mix together all the ingredients in a blender and blend until fairly smooth.

  2. Taste and adjust the amount of salt and pepper as needed.
