Strawberry Granita

I know it’s a bit early but it’s been feeling like spring here for a while now.  This recipe isn’t ice-cream or sorbet so you can make it without an ice-cream maker- all you need to do is freeze this in a tray and then scrape it with a fork before scooping some out to eat. You can make different flavors by using the pulp of any other fruit that you like. This recipe is super simple, fresh, and it’s delicious!

Strawberry Granita

Ingredients
1/2 cup sugar
1/2 cup warm water
3 cups sliced strawberries
2 tablespoons fresh lemon juice

Method:

  1. Combine the sugar and water in a blender; process until sugar dissolves. Add strawberries and juice; process until smooth. 
  2. Pour mixture into an 8-inch square baking dish. Cover and freeze 3 hours; stir well. Cover and freeze 5 hours or overnight.
  3. Remove mixture from freezer; let stand at room temperature 10 minutes. Scrape entire mixture with a fork until fluffy.
