Cheesy Chicken Quesadilla

There are a million different recipes for chicken quesadillas and here’s one version that I make.  I vary the type of seasoning I use from taco, burrito, or nacho seasoning depending on that I have on hand at the time.   You can also vary the types of veggies and cheese in this recipe as well- it’s truly a flexible and customizable recipe.  
I personally really like the combination of chicken with sauteed onions and red bell peppers so I went with that in these quesadillas along with some Mozzarella, Cheddar, and Monterey Jack cheese. 

Cheesy Chicken Quesadilla

Ingredients:
2 tbsps veg oil
2 cloves garlic, crushed
1 jalapeno, finely chopped
1 small chicken breast, cubed
1 red bell pepper, de-seeded and cubed
1 medium onion, cubed
2 tbsp, tacho, nacho, or burrito seasoning
1 cup shredded cheese mixture (I used mozzarella, cheddar, and monterey jack)
4 Burrito wrappers (I used tomato ones) 

Method:

  1. Heat up 2 tbsps of oil in a skillet ad then add the onions and bell peppers and stir constantly until they just start to tenderize, do not cook until the veggies go limp. 
  2. Remove the stir fried veggies from the pan with a slotted spoon.
  3. Add the chicken, jalapeno, and garlic to the now empty skillet and stir constantly until it’s cooked through.  This only takes about 5 minutes, just check for done-ness but do not overcook as it will make the chicken dry.
  4.  Add the veggies back to the chicken and cook for about another minute.  
  5. Heat a griddle or flat pan to about medium heat and heat both sides of the burrito wrapper.  Add the chicken filling along with a generous amount of cheese and top with the second burrito wrapper.  
  6. Once crisp remove from heat and cut into 6 pieces, serve warm with sour cream and salsa.
